About

The Coalition will focus on fostering a community of food truck owners and operators, promoting the food truck industry, organizing events, providing educational resources, and engaging in advocacy to address issues facing food trucks. The specific purposes of the Coalition include, but are not limited to:

1. Promoting the growth and success of food trucks in the Green Bay area.

2. Advocating for favorable local policies and regulations that benefit food truck operators.

3. Providing a platform for food truck owners and operators to share best practices, challenges, and opportunities.

4. Organizing food truck rallies, events, and markets to raise awareness and foster community engagement.

5. Offering education, advocacy, resources, training, and networking opportunities for food truck owners and operators.

6. To represent the interests of food truck businesses to local government and community leaders.

Board Members

The Board of Directors for the Green Bay Area Food Truck Coalition provides strategic leadership, governance, and oversight for the organization. Comprised of experienced professionals and active stakeholders from the mobile food industry, the board works collaboratively to promote the growth, sustainability, and success of local food trucks.

Shannon Heupel
The Dough Shoppe

Experienced food truck owner since 2018, operating multiple units across Wisconsin. Skilled in participating in large-scale events including Lifest, EAA, and Strawberryfest. Member of the Green Bay Food Truck Coalition since 2019, leading efforts in organizing rallies and managing logistics for food truck events, and social media marketing. Currently Food Vendor Manager for Lifest, coordinating vendor placement and operations. Past collaborations include working with Delaware North and the NFL to manage food truck operations for high-profile events such as the Green Bay Packer’s Kickoff Concert and the NFL Draft. Dedicated to helping women start their own food truck ventures and embrace business ownership.

Camilo Maldonado
Taqueria Maldonados 

A key part of the team since the Taqueria Maldonados launch in 2002, with hands-on experience in our signature cooking style and daily operations. Manages the back-office side of the business while staying deeply involved in event execution. From corporate catering and public rallies to weddings, graduations, and private parties, helping bring our food to a wide range of audiences. Passionate about growth, while focusing on helping the business break into wide-ranging events and expand our reach. Member of the Green Bay Food Truck Coalition since 2019.

Brian Miller
Monkey Tailz

Experienced food truck owner since 2014, operating one single unit throughout Northeast Wisconsin.  Member of the Green Bay Food Truck Coalition since 2019. Graduate of the Green Bay Packers Mentor Protégé Program and now a mentor for the Green Bay Packers Mentor Protégé Program.  Previously a volunteer for Green Bay SCORE and former board member of Circles Green Bay.  US Army Veteran 1998-2006. Passionate about helping and seeing small business owners succeed.  Dedicated father and husband who puts God first.  ROMANS 8:38-39
